Day 1 of our nutrient dense school lunch alternatives begins with the school classic meatloaf. Meatloaf is known for being questionable at best, that is why I decided to make my own nutrient dense meatloaf so I know what my kids are eating.
1# ground beef or bison, “Ancestral Blend” from Force of Nature, found in the frozen meat section at Natural Grocers, or online.
1# Mulay’s ground Italian sausage
½ package Epic brand sea salt pork rinds, crushed in the bag.
Seasonings of choice, such as sea salt, pepper, garlic & onion granules, fresh minced herbs, etc.
Sauce topping of choice: BBQ sauce, or a combo of ketchup mixed with sea salt, garlic & onion granules, ground ginger (seriously!!), soy sauce and honey.
