ABC (Apples, Beets, Carrots) Salad was first introduced to me during my training through the
Nutritional Therapy Association. Way back then they used to call it “Gallbladder Salad” (ack!) due to the cleansing qualities of beets and carrots. It’s a great, easy to make salad that has
stuck with me through the years. This is a crisp, refreshing salad perfect for summer!
Carrots and beets are thriving right now at our local farmer’s markets; do your part in saving the planet by making this dish mostly local! I’ve taken this dish (minus the greens and avocado) to potlucks and other social gatherings and it’s always a hit! Since it holds up so well, it also works wonderfully for batch-cooking. I often make a large bowl of it and use it as a side for my lunches throughout the week. Make it a complete meal by serving with marinated tempeh, grilled salmon or seared (bone-in, skin on) chicken thighs. Enjoy!

Ingredients
● 1 green apple, shredded
● 2 carrots. shredded
● 2 red beets, shredded
● 2 Tablespoons minced fresh mint (optional)
and/or 2 Tablespoons freshly grated ginger
● 2 small handfuls arugula or other
salad greens
● 1 avocado, diced
